The official language of Brazil is Portuguese, but like any other language, adaptations are made over time, and it evolves in specific ways in each state. In honour of the Brazilian state where more than half of the country's coffee is produced, we welcome our UAI (pronounced "Why"). UAI is an example of the minority languages spoken in Brazil, created by the people of Minas Gerais. Uai is uai, uai!

Our Uai comes from a farm in the Mantiqueira region where producer Marina Ribeiro da Silva plants and harvests the coffee herself, and then her husband carries it after he finishes work. Although coffee is currently their main source of income, the family's farm still produces bananas and raises dairy cattle, thanks to the state's demographics and climate. 

Our UAI is the Arara variety, which has been increasingly planted in Brazilian soils due to, among other characteristics, its high resistance to a disease commonly found in coffee plantations. Arara is a hybrid between the Yellow Catuaí and Obatã varieties and is one of the most successful to date in terms of productivity. Its small to medium-sized trees produce yellow fruits, with seeds that are oblong and elongated in shape, and have an excellent rating for beverage quality.

Moreover, the delicious flavour of the variety, the Arara planted at the Agua Limpa farm is even more special. Its sensorial characteristics has a balanced acidity with fruity note of plums, caramel body and smooth aftertaste, with a final touch of fennel liqueur make a clean cup with a nice flavour complexity. This coffee goes well in V60, aeropress, and french press.
