Just like the picturesque and symbolic character of the Barranquilla carnival (marimonda), its cheerful people, and their vibrant colours, this funky coffee is a truly representation of how the coffee processing method impacts the flavour profile. The bourbon cherries harvested in the Huila state undergo a controlled fermentation process that was pioneered in the winemaking industry. Termed as carbonic maceration, this method engages the metabolic activities inside the cherries and aids in developing flavour complexity in the coffee. The resulting beans are roasted to highlight their unique groove, resulting in a complex acidity and a delightful berry flavour. We recommend enjoying it as filtered coffee or through immersion methods. It is a delicious coffee, even when served cold.

Striped Bourdon is a varietal genetically related to Pink Bourbon. It originated in the Huila State, and its name, Rayado, was given due to the characteristic stripes present in the cherries, as illustrated in the picture kindly provided by Don Alejandro Ortiz.
